Heirloom Tomato Savory Galette

Galette is a French term for a rustic cake with a savory filling. It can also be referred to as a “Crostata” in Italian. Whatever you want to call them, they always come out delicious and are beyond simple to create. They are meant to be rustic and a bit messy so I love making these way more then pies, and I think you will become obsessed with them too! Here is one of many galettes I have experimented with, and I think it combines the perfect amount of savory and sweet.
Ingredients:
1/4 cup basil
2 tbs butter
1 1/2 cup heirlooms
1 sweet onion sliced
6 thyme sprigs
1 small zucchini sliced
1 egg for wash
Salt and pepper for seasoning
3/4 sharp cheddar cheese
6 oz crumbled blue cheese
Toasted walnuts for topping
Pre made pie dough of your choosing, I like Trader Joes
Steps:
Add butter to skillet over medium heat
Add onions and caramelize for 20 minutes, stirring constantly for the first 5 min
Sprinkle salt, pepper, and some thyme
Roll out defrosted or home made dough about 8 inches all around, feel free to cut ages to shape as an oval
Crumble blue cheese on dough, then onions, basil, and zucchini leaving about 2-3 inches from the edges
Top with sliced heirlooms and drizzle with olive oil
Fold in edges in a pleating form and let set in fridge for 15 min
Preheat oven to 375 degres
Take out galette from fridge and bake for 45 minutes, the last 10 minutes take out and add cheddar cheese
Serve with honey and fresh tomatoes
