Maple Bourbon & Blueberry French Toast

I have always enjoyed making french toast on special occasions for my family growing up. I wanted to create a recipe that was a little bit different from the traditional version I have been used to all these years. After I bought maple bourbon syrup from Trader Joes, I have been trying to put it to some yummy uses which resulted in this recipe! This french toast is very quick, flavorful, and makes for a decadent breakfast or even a dessert.
Ingredients:
2 cups blueberries fresh or frozen
5 large eggs
1/4 cup Maple Bourbon Syrup (Trader Joes)
1/2 tsp cinnamon
1/4 tsp salt
8 slices thick cut cinnamon swirled bread
1/4 cup whole milk
8 pats of butter
Cooking Spray
Powdered Sugar for dusting
Steps:
Preheat oven to 350 degrees
Spay large non-stick baking sheet with cooking spray
In a large bowl whisk together eggs, syrup, milk, salt and cinnamon
Dip each bread slice in batter, let excess batter drip off in bowl
Place each slice in a single layer on the baking sheet
Let the bread soak on the sheet for 5-10 minutes before placing in oven
Top each slice of bread with a few blueberries (place in center of bread)
Bake for 25-30 minutes until bread is golden brown
Remove from oven and top with pats of butter along with powdered sugar, more blueberries, and extra syrup
Serve warm!
