Maple Bourbon & Blueberry French Toast

I have always enjoyed making french toast on special occasions for my family growing up. I wanted to create a recipe that was a little bit different from the traditional version I have been used to all these years. After I bought maple bourbon syrup from Trader Joes, I have been trying to put it to some yummy uses which resulted in this recipe! This french toast is very quick, flavorful, and makes for a decadent breakfast or even a dessert.

Ingredients:

  • 2 cups blueberries fresh or frozen

  • 5 large eggs

  • 1/4 cup Maple Bourbon Syrup (Trader Joes)

  • 1/2 tsp cinnamon

  • 1/4 tsp salt

  • 8 slices thick cut cinnamon swirled bread

  • 1/4 cup whole milk

  • 8 pats of butter

  • Cooking Spray

  • Powdered Sugar for dusting

Steps:

  1. Preheat oven to 350 degrees

  2. Spay large non-stick baking sheet with cooking spray

  3. In a large bowl whisk together eggs, syrup, milk, salt and cinnamon

  4. Dip each bread slice in batter, let excess batter drip off in bowl

  5. Place each slice in a single layer on the baking sheet

  6. Let the bread soak on the sheet for 5-10 minutes before placing in oven

  7. Top each slice of bread with a few blueberries (place in center of bread)

  8. Bake for 25-30 minutes until bread is golden brown

  9. Remove from oven and top with pats of butter along with powdered sugar, more blueberries, and extra syrup

  10. Serve warm!
