Sweet Potato Crostini

Anyone who knows me well, knows that bread and cheese are my kryptonite. I have recently started to cut a little bit of gluten out of my diet for health reasons, which led me to get creative with my crostini recipes. Sweet potatoes make the perfect replacement for the bread with their dense and starchy texture. I topped these little guys off with some creamy goat cheese, crisp pear, walnuts, and honey which made them super satisfying.
Ingredients:
1-2 sweet potatoes
Olive Oil
6-12 oz Goat Cheese
1 pear sliced thinly
Handful of micro-greens
Handful of walnuts
Salt and pepper
Steps:
Preheat oven to 400 degrees
Wash and dry sweet potatoes, and cut into half inch thick slices
Toss slices in a bowl with olive oil, salt, and pepper, coating evenly
Lay out slices on a lightly greased baking sheet and bake for 10-15 min checking slices halfway through to flip over (they cook quickly)
After sweet potatoes look lightly browned remove from oven and let cool slightly
Add a dollop of goat cheese to each slice, top with a couple walnuts, micro-greens, and drizzle with honey
